My Vegetarian College Roommate’s Squash Casserole

2 cups cooked squash
¼ stick butter
2 beaten eggs
1 tsp salt
½ tsp pepper

1 cup chopped onion
1 cup grated sharp cheddar
1 cup milk
2 cup saltine crackers mashed

Mash squash and add other ingredients. Bake at 375 for 40 minutes. You can vary the amounts of squash, onion, and crackers and it always turns out well.
