Ol’ Timey Squash Casserole

This is one of my favorites. I usually make it for Thanksgiving dinner. One summer in Virginia Mom made this. We gave it to Jack to carry from the car in the lake parking lot up to the pavilion. He was pretty young at the time. He got less than 10 yards from the car and dropped the glass dish on one of the embedded rocks. Needless to say the dish shattered and we were squashless for that meal. Kathleen considers that one of Jack’s most endearing moments, since she absolutely HATES squash.
3 lb squash, more or less |
¼ cup butter 1 TBL sugar 1tsp salt pepper |
Cut, cook till just tender, and drain thoroughly, then mash the squash. Add all the other ingredients, mix gently. Place in greased baking dish. Top with buttered crumbs – cracker, bread or whatever. Bake at 375 for about an hour, or until it appears set and brown.
