Shredded Potatoes au Gratin

This is the recipe I make for Thanksgiving dinner.

6 medium white potatoes
2 cups shredded cheddar cheese, though I   usually mix in fresh grated Parmesan with it
6 TBS butter
2 cups sour cream
1/3 cup chopped onion
1 tsp salt
1/4 tsp pepper (not enough, in my opinion)
I've added a dollop or two of horseradish at times

Boil potatoes in skins. Chill, peel and shred. I use a cheese grater. Stir in cheese and 4 TBS melted butter. Fold in sour cream, onion, salt and pepper. Place in greased casserole and dot with remaining butter. Bake at 350 degrees for 30 minutes. Serves 6-8 or maybe three if Matt C. is going to be there.
