Mushrooms Au Gratin

Here is a GREAT mushroom recipe.  It’s very easy and can be fixed ahead of time.

1 clove mined garlic
1 onion, grated
2 Tbl fresh parsley, chopped
1/8 tsp died basil
1 tsp salt
¼ tsp pepper
1/3 cup salad oil
2 Tbl wine vinegar
1 ½ lb fresh mushrooms trimmed and sliced
¼ lb butter
½ cup fresh bread crumbs
¼ cup freshly grated parmesan cheese

Combine garlic, onion, parsley, basil, salt, pepper oil and vinegar in a large mixing bowl.  There will be very little liquid.  Add mushrooms and marinate for 3 hours, stirring frequently.

Melt half the butter in a large skillet.  Drain any remaining marinade from the mushrooms.  Add the mushrooms to the skillet and cook over high heat for 1 minute, stirring.

Butter a shallow 1 quart baking dish and place the mushrooms in it.  Top with bread crumbs and cheese.  Dot with remaining butter.  (Recipe can be prepared to this point refrigerated up to 6 hours).  Broil 6-8 inches from heat for 3-5 min to brown before serving.
