Golden Gorgonzola Potatoes

(I didn't peel the potatoes. The skin of Yukon Gold potatoes is very thin. And all the
nutrients are in the skin)

2 lbs Yukon Gold potatoes peeled and cut into thin slices
1 cup Alfredo sauce
1/2 cup canned fried onions


1/4 cup gorgonzola cheese
2 TBL garlic butter
1/2 tsp salt

Cover potatoes with water and bring to a boil. Boil for 3 minutes, then drain. Mix rest of ingredients, reserving 1/4 cup onions. Mix with potatoes and put in baking dish. Top with remaining onions and bake
for 30-37 min at 375.
