Tamsey’s Brussels Sprouts

Tamsey's notes: I love Brussels sprouts, but many don’t, including several in my family. But I found an incredibly simple way to make them taste even better…..and I converted my entire family to Brussels sprouts eaters. 

Dress 1 pound of Brussels sprouts and slice each in half. Melt 3 tablespoons butter in a skillet. Add Brussels sprouts and toss to coat. Place sprouts cut side down in skillet. Add ¼ cup water, cover, turn heat to low and cook until the sprouts are just barely tender, about 8 minutes (or less). Take the top off and cook until liquid evaporates and sprouts are lightly brown. Add 2 tablespoons REAL maple syrup and ¼ tsp Dijon mustard, salt and pepper. Cook and stir to coat, then serve.

The maple sugar is perfect with the Brussels sprouts. The key to great Brussels sprouts is to not overcook them. They should still be firm and a little crisp when eaten.
