Tomato Refresher

2 small green peppers, diced 
2/3 cup diced celery 
2 small diced onions 
1 tbsp. salt
¼ tsp. pepper
¼ c. vinegar
¼ c. sugar
1 c. cold water

Combine all and pour over 6 sliced tomatoes. Chill several hours or overnight. You can eat the tomatoes and continually add more.
