Bok Choy Salad
Mom

1 head bok choy, stems and leaves chopped
2 or 3 green onions chopped
1/4 cup sesame seed
1 cup sliced almonds
2 T sugar
2 pkgs. ramen noodles, crushed and w/out the seasoning packet
1/4 margarine or butter

Using a heavy skillet, brown the seasame seed, almonds, noodles and sugar in butter. Let cool. Prepare bok choy and onions in a large bowl. Just before serving, stir in noodle mixture and dressing.

Dressing

3/4 cup salad oil
1/4 cup red wine vinegar
1/2 cup sugar
1 T soy sauce

Mix dressing in a jar, shaking well before adding to salad.

Ed. note: I make this a lot, and usually add green leaf lettuce to increase the volume. I also don't add all the dressing...too much.
