PERFECT PESTO

Here is another of my favorites.  The kids, especially Kathleen, LOVE pesto.

2 cups fresh spinach
½ cup fresh basil
½ cup fresh parsley
2-3 cloves chopped garlic (more, or less to taste)
1/3 cup freshly grated Romano cheese
½ cup freshly grated Parmesan cheese
1/3 cup pine nuts
¼ cup olive oil

Rinse the greens, but do not dry.  Put in food processor with all other ingredients and process until almost pureed.  If too thick, add 1 to 2 TBL water.  Serve over pasta.  Enough for about 1 lb of spaghetti.
