Jane Weldon’s Pesto
Julie

3-4 cups basil
2 large garlic cloves
½ cup pine nuts or walnuts
¾ cup parselely (optional)
¾ cup parmesan (use good parmesan)
½ cup extra virgin olive oil
¼ cup melted butter
Salt to taste (Julie does not add salt)

Blend low to medium speed in a food processor. Toss with pasta. (Jane is Tom and Julie’s friend from Charlottesville.) Julie is addicted to this pesto and grows lots of basil so she can make it.
