Maa's Apple Butter

20 gallon kettle (I'm sure you all have one of these)
7 bushels apples = mixture of stamen and york
50 lbs sugar
½ gal vinegar
1 qt. water
½ tiny bottle of oil of cinnamon
(purchase at drug store)

Rinse kettle with vinegar and salt, then water.  Start with ½ gal. vinegar and water, bring to a boil, add apples, stirring continuously as apples are added and mixture boils down. When all lumps are gone – 6 to 8 hours – slowly add sugar.  Add cinnamon at the end.  Done when a spoonful stands in a peak on a plate and no water seeps out around it.  Move off the fire.  Set jars in flat pan of hot water before filling.
