Ham for omelettes: I went to the deli and had them slice one piece of ham at the thickest setting possible. I cut it into cubes and froze in freezer zip lock bags, spread out flat so the pieces weren't are clumped up. Once frozen, it is easy to remove only what you need for an omelette. Thaw in the microwave before using. Chicken: boil or bake boneless chicken breasts or thighs. Chop into bite-sized pieces. Freeze as above. Great for stir fry, soup, casseroles. |
