Salmon Croquettes

Even Barry liked these! Moist and light on the inside, crispy on the outside. I like them with a small amount of very hot coctail sauce. This recipe can be divided in half, making about 8 croquettes. 2 make a good serving for one person.
2 cans (approx 15 oz each) salmon, drained
Heat 1/2 inch of oil in a large skillet over medium-high heat. Fry a few croquettes at a time - don't crowd - until golden brown and crisp, about 3 to 4 minutes per side. Keep cooked croquettes in a warm oven while frying the rest. Makes about 16 croquettes. |
