Salmon Croquettes

Even Barry liked these! Moist and light on the inside, crispy on the outside. I like them with a small amount of very hot coctail sauce. This recipe can be divided in half, making about 8 croquettes. 2 make a good serving for one person.

2 cans (approx 15 oz each) salmon, drained
1/2 cup grated onion
1 cup finely chopped celery
Juice of 1/2 a lemon (approx 2 Tbs)
1 Tbs Worcestershire sauce
2 eggs, beaten
3/4 cup milk
1 1/2 cups cracker crumbs
1 1/2 cups panko


Place salmon in a large bowl, removing skin and large bones. Flake with fork. Stir in remaining ingredients except panko. Blend well. Shape into croquettes using a 1/3 measuring cup. Carefully coat with panko and let rest.

Heat 1/2 inch of oil in a large skillet over medium-high heat. Fry a few croquettes at a time - don't crowd - until golden brown and crisp, about 3 to 4 minutes per side. Keep cooked croquettes in a warm oven while frying the rest. Makes about 16 croquettes.
