Desayuno chino
From Paul: Here’s a recipe of my own invention which I am proud of. It’s easy to make and quick to clean up. It is a version of a Chinese breakfast standard made with local ingredients.

Tortillas
One or two eggs per tortilla, depending on hunger
Butter
Soy sauce and sesame oil or stuffings of your choice

Warm tortilla in a tortilla-sized frying pan. Scramble egg(s) in a bowl. Remove the tortilla and turn heat to high. Melt a tablespoon of butter in the frying pan. Pour in the egg, put the tortilla down, and squish around to distribute the egg. When the egg is done, you should be able to peel the whole thing straight from the frying pan onto a plate. Here you have two choices:

  1. For muy autentico, season with sesame oil and soy sauce.
  2. Or cheese and green onions or what have you.

Roll up and serve.
