WATERMELON RIND CHESS PIE

Be sure to tell Cleve it is cinnamon pie.

The Preserves

11 cups finely chopped, skinned rind
8 cups water
9 cups sugar
4 sliced lemons
4 sticks cinnamon
4 tbsp whole cloves

 

Soak prepared rind over night in salt water.  Drain, and cook until tender in small amount of water.  Drain, boil all other ingredients for 5 minutes, add rind, cook until rind is transparent, then put in sterilized jars and seal.

The Pie

3 eggs
3 tbsp melted butter
1 cup sugar
¼ cup milk
1 tbsp cinnamon

 

Mix ingredients together.  Cover bottom of uncooked pie crust with preserves, pour mixture over them, bake at 325 for about 1 hour.
