SCOTCH OATMEAL SHORTBREAD

3 cups raw oats
2/3  cup sugar
½ cup flour
½ tsp salt
¾ cup butter
1 tsp vanilla

 

Heat oven to 350.  Lightly grease a 13 x 9 pan.  Combine oats, sugar, flour, and salt.  Cut butter in until mixture resembles coarse cornmeal.  Stir in vanilla and mix well.  Press with hands into pan and bake 25 to 30 minutes.
