Opal’s Plain Cake

From Tamsey: I hate to add to the dessert list, but this is one of the best and most versatile desserts in my library.  It’s like a pound cake only a little moister and lighter….better.  And yes the recipe came from Opal.

1 box confectioners sugar
½ lb butter
1 ½ tsp vanilla
1 cup milk

3 cups flour
1 tsp baking powder
salt
5 eggs

Sift sugar and cream with butter.  Beat in eggs, one at a time.  Add milk and vanilla.  Sift flour, salt, baking powder and add to batter, mixing well.  Turn into greased 10” tube pan and bake at 325 for 1 hour and 15 minutes.
