LEMON CHESS PIE

Ed. note: this recipe has been altered, increasing the number of eggs and the cooking time.  Sorry if there were some soupy pies out there

3 tbsp corn meal
2 cups sugar
1 tbsp flour
4 unbeaten eggs
¼ cup milk
¼ cup melted butter
¼ cup lemon juice
2 tbsp lemon rind

Mix all together and pour into unbaked pie shell.  Bake at 400 for 10 minutes, then 350 until when shaken it doesn't jiggle in the middle.  Another way to tell when done is to stick a table knife in - it should come out clean.
