Southern Spoon Corn Bread

Note from Beth: I think this is Maa's recipe because it is one I got from Mom years ago. She wasn't sure.

2 cups white corn meal
2 1/2 cups boiling water
1 1/2 T melted butter
1 1/2 t salt

2 egg yolks, slightly beaten
1 1/2 cups buttermilk
1 t baking soda
2 egg whites, beaten till stiff

Add corn meal gradually to boiling water - let stand till cool. Add butter, salt, egg yolks and buttermilk mixed with baking soda. Beat two minutes and add whites of eggs. Turn into a buttered baking dish and bake in a 400 degree oven for 40 minutes.
