Pizza Dough
Tamsey

2 cups flour
2¼ tsp yeast
½ tsp thyme
½ tsp salt
1 Tbs olive oil
1 cup warm water

Mix dry ingredients.  Add water and oil and knead in mixer with dough hook or food processor.  Add flour until dough is not sticky.  Let rise for 30 min.  Grease your fingers and a pan with olive oil.  Press dough out as thin as you can (or want).  Top it “your way” and bake at 450F for 15 to 20 minutes. 

Topping suggestions:  my kids like the standard tomato sauce with ‘loza moza’ (mozzarella cheese).  Fresh herbs such as basil, oregano and thyme, are GREAT.  My favorite way is to brush the unbaked pizza with garlic and olive oil and top with artichoke hearts, calamatra olives, feta cheese, mushrooms, onions, tomatoes, basil and oregano.
