Corn Bread

Ed. note: My friend Jean made this at the beach and it is a very tasty, moist corn bread.

1 8oz. box Jiffy Cornbread mix
4 eggs
3/4 cup sour cream
1/4 cup sugar
1 8 oz. can creamed corn
4 oz. (1/2 cup) baby food applesauce
   or 1/2 cup oil

Whisk all ingredients except cornbread mix. Stir in cornbread mix until large lumps disappear. Place in greased 9x9 baking dish or, if doubled, 9 x 13. Bake at 350 for 30-45 minutes. Refrigerate leftovers.
