CHEESE BATTER BREAD – Jean Bernard
1 pkg. Yeast ¾ cup evaporated milk ¾ cup warm water 1 tbsp sugar |
1 tsp salt ½ tsp paprika 2 ½ cups flour 1 cup grated sharp cheddar cheese |
Dissolve yeast in water in mixing bowl. Stir in milk, sugar, salt, paprika and ½ the flour. Beat 2 minutes with electric mixer. Stir in cheese and rest of flour. Scrape bowl down, cover, let rise in warm place till double in bulk. ( I put a roasting pan of hot water on the bottom shelf of the oven and the dough above it and close the oven. If really cold, turn on the oven light.) Stir hard for one minute. Spread batter evenly in a greased loaf pan. Let rise till center of loaf reaches the top of the pan. Bake at 375 for 50 min. Remove from pan, brush with butter, cool on rack.
