Mom's Cheese Ball/Spread

This is one of the best cheese balls I've ever eaten.

8oz. finely shredded sharp cheddar cheese
8oz. cream cheese or neufchatel
1/2 cup mayo
1/4 cup chopped pimento stuffed green olives
1/4 cup chopped spring onions
2 Tbs lemon juice
1/4 tsp ground red pepper

I forgot to ask Mom what to do with all this stuff, but I think you just mix it together, form into a ball and chill. According to Mom, the neufchatel makes it softer and more spreadable than cream cheese.
