Craisin Crunch

This could also be classified as a dessert because it is sweet. Jean brought a big batch to the beach and it was great to nibble on. By the way, Craisins are dried cranberries.
2 bags Craisins (12oz.approx. 3C) |
Preheat oven to 250. Mix the above ingredients together in a large greased baking dish (needs to be larger than 9x13)
¾ C light Karo syrup |
Place in 4 C microwave proof bowl or measuring cup. Microwave on high for 90 seconds. Stir and microwave for another 90 seconds.
Remove and add:
1t. baking soda
2t. vanilla
Stir until well blended. Mixture will expand as you stir. Quickly pour over cereal and stir to coat. Bake for 15 minutes, remove and stir. Continue to bake for another 45 to 60 minutes removing every 15minutes to stir. When cereal is lightly browned remove from oven and put on waxed paper to cool. Break apart once cooled completely. Store in airtight container. Keeps for weeks!
